Buried Cheese is a savory blend of buttery and aged notes with a light finish of aromatic fennel and caraway flavors. Nana Souzi followed the ancient Assyrian custom of storing handmade cheese in a clay vessel, then burying it in her garden until it was aged to perfection. Bringing this cherished family recipe with her to America, she quickly adapted it to modern-day storage methods.
